The "only" problem with the tone wheel versions (before solid state and ICs) is that they need to be lubed (relatively easy) and they need to have new belts linking the motor and the tone wheel shaft. Not made any more. I DID find a plumbing o-ring of the right size, but after about 15 minutes of running, they heat up and get a bit too stretchy to turn the tone-wheel shaft. After they cool down overnight, it's fine the next day for another 15 minutes of enjoyment. I have a standing offer to have a MIDI put into my Conn, but the control MUST be via the tabs, and not some computer touch-pad- that would be very un-retro.
I'll go with the B-3, but that could be bias based upon my fondness for Jon Lord.

Among electric organs, I always found the Baldwin organ to have the most realistic pipe organ sounds. Unfortunately, the Baldwin Piano and Organ Company went bankrupt around 2001, and was sold to Gibson, the guitar maker. They have continued to manufacture pianos in China with the Baldwin name stenciled on them, although those pianos are not built to the old Baldwin designs. But I haven't heard anything about the company continuing to make electric or electronic organs.

Best organ is Compton theatre organ. Ones like those in Apollo Hammersmith, Odeon Leicester Square and Pavilion Bournemouth. All in Uk.
Hammond tone wheel organs are classic. B3, A100 etc.
Also electronic theatre organs like Allen. They go up to 5 manuals.
Actually, Compton is a pipe organ, so I voted that one
No clue. Generally musicians use VST instruments nowadays and only mechanical keyboard quality differs
