If someone offers you food out of the kindness of their heart should you have a choice to accept or decline without backlash?

My mom says if someone offers you something you always accept it and if you don't want it throw it in the trash afterwards but don't be rude and say no

She asked her niece if she could stop by and give her some food she made and her niece said "no don't because my daughter's boyfriend is making us dinner tonight"

My mom got mad after that response and hung up and deleted my cousin from all her social media

It's a tricky situation. If someone says to you, "I want to cook you XYZ" and you politely say no thanks, that isn't rude. But if they cook XYZ for you without asking and then give it to you in person it would be rude for you to say no. What you describe may be a grey area because maybe the niece was rude. It's all about how you say it.
Not accepting something actually made for you or given in person to you is rude 99% of the time.

You should never feel pressured to accept a gift just to make someone happy, especially when it's clear that they are doing it for their own validation and they don't genuinely give a shit about whether you appreciate it or not.

If someone offers me food so that i won't thirst over it or feel left out, i will reject it happily saying i don't eat it or something. This has happened way back. Nowadays i accept it because i have socialized more

Some homeless guy offered me a cheese danish in a styrofoam container he said he got it for me. I know this isn’t true because I wasn’t even on that route I just happened to walk down it. I didn’t know where he got it from and how he got it, if he did anything to it or if it was fresh, half eaten, old, or sitting in a dumpster. I politely said no, and he starts to get frustrated. He tells me to take it, take it, take it with you. I said no, I can’t I am working I can’t eat on the job let alone have breaks, it’s a part time job. He keeps insisting I take it. So I began to walk away and this homeless man throws the styrofoam container in the street. He says, if people offer you food you expect me to take it but I just offered you food and you declined it. I looked back and said, yes I did and I’m not hungry I’m working.

Your mother is obnoxious. Don’t be like her. Your cousin reasonably didn’t want to have to interrupt their evening socializing with your mother, however briefly. its also possible your cousin doesn’t like your mother’s cooking.

No my mother clearly stated she orderd the food from a restaurant , and my mother is known to possibly have covid But her niece's daughter also has covid

So that can't be the reason , because the boyfriend who is cooking dinner could have covid too because they all live together and she eating his food tonight
