I have always found this practice so weird that in-laws would want you to refer to them as "mom" and "dad" even though you are married to someone who is their actual biological child. Weird or no?

I personally would feel uncomfortable to call my in-laws mom and dad. I would rather call them by their names.
No it's not weird, that's what my husband and I both do.
I stopped even calling my parents mom/dad as soon as I learned their names. So no chance I would do that.
I think it’s fine. They want you to feel more comfortable.

I called my in-laws by their first names.
I didn't meet them until I was 35 years old.

I've been calling my inlaws mom and dad for 30 years
I'd feel weird about it 🫤
(pt 2) but it could also be worse though, 😅
