To what point is a relationship with a parent unfixable?

I'd say if there is a clear lack of respect for the other person involved - when parents are a part of it, it is also mostly a power dynamic, and parents take their children much less serious than the other way around. If both can't meet on the same eye-level, there's no hope.

The answer to this question is so situational, it just depends on what's going on. But I would say most of the time, stuff is fixable as long as all parties are willing.

A lot depends on the context, but things can be fixed, it does take being adults and discussing everything without losing focus on resolving things. Admittedly there are potentially things that can’t be fix or you would not want fixed.
