How should I handle Easter dinner for an adult picky eater in the family?

It's my turn to make Easter dinner, so I'm doing a pineapple glazed ham, mashed potatoes, Mac and cheese, and green beans. All scratch made (no boxed stuff here). Everyone in my family is absolutely happy with the menu save for my sister in law. Why? It's not because she's vegan, or vegetarian. It's because at almost thirty she will only ever eat cheese pizza, chicken nuggets, and Mac and cheese. I am doing my best to accommodate her with the Mac and cheese, but she doesn't like it, it's not like her 99 cent Mac and cheese you get from the store (powder cheese, eww), and I didn't get her chicken nuggets. So I ordered her a small cheese pizza.

She's almost 30 and eats like this. And worse, she's teaching her daughters the same way. At least at my home her kids are trying everything, even though she's telling them it's nasty.
How should I handle Easter dinner for an adult picky eater in the family?
