Aloe vera is generally considered soothing relieve for the skin, and for many, it is. But, since its leaves contain latex, it can irritate many people who are allergic to latex. The latex allergy can also cause stomach issues such as irritation, stomach cramps and low potassium levels.
And even if they can tolerate the latex, some people can be allergic to the (simple) aloe vera gel, causing skin allergies, redness in the eyes, skin rashes, skin shedding, irritation and burning sensation.
Many aloe products also contain a bunch of other chemicals, any of which might cause an allergy in sensitive individuals. If there is glycolic acid or salicylic acid, then it is likely that there will be sloughing of the skin, since these chemicals are included to do exactly that- get rid of superficial skin cells.
See your family doctor or a dermatologist: they may want to do an allergy panel on you to check.

I actually have an unusual allergic reaction to it that makes me break out in flaky skin with scabs. They sell it as a healing thing so my mother put Aloe Vera lotion on me when I was cut and my whole skin turned into this scabby, dry thing with flakes and blood. I thought it was an infection from my wound but I did again on my foot and the same thing happened. I seem to have an allergy of sorts. But I can eat aloe vera yogurt with no problem. It's only the lotion stuff that seems to fuck up my skin.
No. Being dehydrated causes peeling. Aloe is supposed to give moisture to your skin. You need to drink more water

I wouldn't have thought so, it is a good ph balance for skin so presumably that means it should be gentle / helpful to skin?
Perhaps you have been using cleansers which are too harsh or otherwise washing too much and stripping the natural oils from your skin etc?All moisturizing lotions will eventually make you peel. If you are talking about sunburn I prefer taking vitamin D and vinegar tubs
I've used Aloe Vera a few times and it never caused any peeling.
