I would try to find some casual activity I enjoy doing and bring it up in conversation. If the first one doesn't seem interesting to him, bring up another. (Climbing, painting, museum, eating any particular type of food). If he expresses an interest in the activity, just casually invite him to join you "I'm going there this Saturday, want to join?" Trust me, if he is interested and not completely stupid, he will absolutely join you on one of those outings.

If that feels too bold, ask him for a lunch recommendation / ask if you can join him for lunch. Work is an excellent place for getting to know someone with pretty much no pressure!

Currently in this right now. He ended up giving me his number. We've been on two dates over the past few weeks and we take breaks together now, well when we can since we're both busy. He's in a different department than I and he's not my boss. We just don't show PDA unless no one is around.

For me it depends on the circumstances. If they can help out in stressful situations, I see a sympathetic reason for bonding with them. But still, no reason, no bond. Work is work.
