Here's what you do:
Go up to her and say hi. Then say "Hey do you mind if I get your phone number? You're the only one I don't have."
After she gives it to you, say:
"Cool, thanks! It's strictly for work. I promise I won't text you and tell you how cute you are."
Then walk away, and about 10 seconds later, text her: "Hey, you're cute"
I've done this little trick many times at work and it works every time. I promise

Maybe a new movie or show you've seen, music, current events, social media, jokes are a great ice breaker. The trick to continuing a conversation is just adding in some additional information, making connections with your own life, or getting excited about what you're talking about. It might also be easier joining into a group conversation rather than a 1-on-1 conversation since you seem to be a bit shy. You could also just walk up and give them a sincere compliment on their hair, nails, makeup, attire, laugh, smile, personality, work ethic, etc. People love compliments and if it seems genuine that will make them more likely to open up to you. Also always make sure you're smiling, high energy, and have open body posture.
