I would not say its not because he doesn't trust you per say... but yeah, he is thinking about what you might be of really meant or what made want to say that.
Hummmm? What did you really mean by saying that?
Or Hummm? Why would you say that, or what makes you say that?
But yes, hummm means there is some degree of uncertainty about what you just said.

So, I use hummm... in response to a question as way to of expressing that what she just asked is something I never really thought about. So like Hummm... I have to think about that and get back to you.
In this example I usually just do not say Hummm... I say Humm, I am not sure about that. Or Hummm, I have to think about that and get back to you.
Sometimes I Humm... because she just said something that I am uncertain about. Like Hummm, not sure I know what you mean? Or Hummm... are you sure about that? Or Hummm... I am not sure that about that.
But if he is just saying hummmm... And not following up with any additinal comments... then yes, he is just fishing for you to say more before he really gives a legitimate answer.
I have woman do this to me as well. You say something and she says Hummm.
I always respond with, "Humm, what?" or I say, "what makes you say that?"
