One of the easiest things you can do to save time in the kitchen is to buy a rotisserie chicken which you can get from basically any major grocery store chain or big box supplier like Sam's Club and then use it to make a variety of easy meals.
1. Tortilla Soup
(1) 1 lb Shredded Chicken, 6 c Chicken Broth or Stock, 15 oz can of black beans drained, 15 oz Can of diced tomatoes with onions and chilis, Small Can of Sweet Corn (drained), Small can of green chilis (you only need a few, drained and patted dry), 1 tsp cumin,
1 tbs Masa (optional), 1 tsp paprika, 1 tbs lime juice,1 tbs Chili Powder, (Salt, black pepper, and cayenne to taste)
(2)Tortilla Strips/Chips, Cilantro, Diced Avocado, Mexican shredded cheese or Queso Fresco
*Add all of the ingredients of 1 into a pot and bring to a simmer 15-20 minutes, adjust seasoning, then add the fixings in 2 right before serving
2. Chicken Salad
4 c diced chicken, 1 stalk diced celery, 1/4 c diced onion (<--you can find these pre-diced in your grocery produce aisle) 1 c mayonnaise, 1 tsp dijon mustard, 1.5 tsp fresh dill or tarragon, 2 tbs finely chopped parsley, 2 tsp lemon juice, 1 tsp pepper, 1/4 tsp celery salt, 2 tsp kosher salt, pepper to taste
*Place all ingredients into a bowl and mix until combined and then serve on the toasted buns/rolls with lettuce and tomato.
3. Chicken Fajitas
1 lb Shredded chicken, (Julienne=cut into thin strips) 1-2 Bell Pepper (any color) and 1 onion, 1 packet of fajita seasoning
*Cook the onion and bell pepper until onion is translucent. Add chicken and seasoning packet (follow instructions on packet), cook until incorporated. Serve on warmed tortillas (corn or flour) with shredded cheese, lettuce, tomato, guacamole, and pico de gallo. Alternatively, serve over white or Mexican rice.
4. BBQ Chicken Sandwich
Your favorite BBQ sauce, shredded chicken, pickles, butter, buns
Combine chicken, bbq sauce together and heat in microwave or on stove. Coat buns with butter and toast under a broiler until golden brown. Put chicken on buns, top with pickles, serve.
