where is the Bechamel Sauce? you can't call it a 'lasagna' without the bechamel sauce! How dare you?

  It doesn't necessarily have to have bechamel. Many Italians use ricotta instead of bechamel. Sticking to strict rules is silly and completely against what Italian cooking is about. It's about making simple good food with the ingredients you happen to have.
