If you could open a restaurant, what kind of food would you serve?

Would it be a fast food franchise or fine dining? Maybe a drive in diner? What kind of food would you be serving? I would make a Haitian cuisine buffet since I haven't seen one before and I don't see my culture expressed enough!

I had some bear stew once... soooooo good.
The local sheriff's department would confiscate poached animals and have the food prepared at a local soup kitchen for the. homeless. we went to help serve and there was a bit of food left over. Bear stew... just wonderful.

Chili.
We just had a chili cook-off at work.
I didn't get first place but my Crock-Pot was the only one empty at the end of the competition.
I found some recipes online and made three batches making minor adjustments to each one. My kids are PICKY PICKY PICKY! But they ate all of it in less than 24 hours.
I call that recipe "Slow Burn".
Not too hot, the heat doesn't take away from the flavor at all but it builds up...
No beans, no tomatoes... just really good.
They're going to change the judging rules next year because the judges like a certain type but the rest of the office like others.

I'd say burgers. I'd try to specialize with professional chefs to make tastes that were not only unqine but tasted amazing with a new burger flavor every month. It's been done of course, by many but I'd like to take burger flavors to the next level

Raw and nude you know. Then when you are done you can eat them like they do roast pigs. A "experience" start to finish fine dinning type thing. With the option to either roast and fillet them raw and salted yourself. Probably either on a ship or mountain top.
