Probably a BBQ joint that mashes a bunch of dishes together from different ethnicities.
Like... a variety of smoked sushi (salmon, pork, enoki mushrooms, beef), inhouse Montreal smoked meat poutine, grilled vegetable and warm goat cheese sandwiches, stuffed walleye (baby spinach, Swiss cheese, and asparagus) with a raspberry balsamic glaze, grilled pork schnitzel sandwich with German Spätzle, grilled vegetable lasagna, grilled/sauteed vegetable and smoked beef/pork meatball baked spaghetti, etc.
Sides such as chip truck style lattice fries and creamy onion dip, grilled rice cakes with peanut satay sauce, green onion and extra dipping sauce, handmade flavored chips, etc.
I'd probably open some kind of nacho buffet; start with a base of chips, meat and cheese and add in toppings and additional layers as appropriate. As an added bonus, unusual options would encourage people to experiment, so you'd get lots of interesting new discoveries. Pineapple and giardiniera? Sure! Turkey, Gouda, and radish chips? Why not? It might not turn out well, but not every experiment succeeds.
I'd probably also have to open a napkin factory to keep up with consumption, though.

Crab salad, bread, and shakes. No, I don't expect people to order them together. But they can, if they want.

If I had unlimited funds, I'd open up a fixed price menu dinner restaurant. It would include lots of high end stuff, but for apps I'd offer seafood like bacon wrapped scallops, fresh oysters and my home made gumbo!
My other desire is to open up a true "NY style" thin crust pizza place, that also sold real Sicilian style pizza on certain days. The only other items would be meatball sandwiches, pasta and meatballs, and eggplant parmigiana.
