We call them crawfish and they're pretty good to me personally it tastes like a mixture of shrimp and lobster in my opinion and they're pretty good honestly

They taste just like crawfish. We used to catch & eat them when I was a kid. All you ate was the tail.

Break the tail off cook in boiling water with salt. We would catch them by the dozens along the shore in live traps
