I dip my fries in gravy and sometimes I cover my fries in gravy.
I use all kinds of gravy, beef, chicken, pork, breakfast sausage gravy.
Try it, I learned about this when I went to Kentucky decades ago, been doing it ever since.
Gravy and fries is even on the menu in most southern states

Something that is common in the western US but not really heard of else ware.
I often make my own, two parts mayo, 1 part ketchup, little bit of vinegar, some pepper and a tad bit of dill pickle juice. If Ketchup isn't an option some bbq sauce will work too and changes the flavor up. Lots of ways to make, endless variations.

In Canada people eat gravy and fries. I thought that was only a southern states thing

Depends on what kind of fry it is. I never out ketchup on my fries unless they also have cheese on them. But it's usually cheese or honey mustard. Or into the milkshake.
i hate sauces, so just plain fries for me lol. fries taste pretty good in my opinion, i just don't like eating them much since they aren't nutritional at all and are high in calories. so i try not to have them very often lol, once every 2 weeks is ideal.
I generally don't eat junk food much anymore. I save things like fries for special situations when out with friends. About 5 years ago the very pregnant daughter of a girl I was seeing turned me to mixing onion ring dipping sauce with some regular BBQ sauce and a VERY few drops of tabasco sauce. She liked it, she had an excuse. I developed a taste for it, have no excuse!
When I'm having fish and chips, I dip my fries in tartar sauce.
If I'm eating BBQ, I dip my fries in BBQ sauce.
If I'm eating a chili dog, I dip my fries in chili.
Chili and cheese over fries is good.

I usually just eat fries raw dog with the salt that comes on them. But if I get to dipping, BBQ sauce is the way to go. I’m not a huge ketchup guy, or even a huge condiment guy. But BBQ sauce is an outlier, that’s the nectar of the gods right there.
As someone who lives in a city famous for it's BBQ sauce, where do you come down on the big BBQ debate? Texas, Memphis, Kansas City, St. Louis or Carolina? For the uninitiated, each is different and opinions run strong. Maybe that deserves a post of its own.
@SinceYouAsked I’m embarrassed to say I haven’t experienced all the different styles, Massachusetts is far from a BBQ hotbed, haha. Like I’ve never had the Carolina vinegar or mustard infused varities, for example. I had legit BBQ in Austin, TX, and the sauce was pretty solid. I’d say I’m most accustomed to Kansas City style though, so that’s probably my running favorite until I can speak on the matter with a little more authority, haha
If I can't say ketchup then it has to be salt. If only restaurants would salt their fries. I have to use more salt to get the same amount to stick to the fries; but if they would add salt after they take them out of the oil they could use a lot less. The same goes for chips and onion rings. These foods are made to be salty. But because everyone is worried about high blood pressure people eating salty foods they don't add salt. Instead of having them exercise some self control and eat one or two and stop.

I mix ketchup, mayo - squeeze of a lemon and little seasoning. They don't have my fries dressing here - so I make it.
If it is McDonald's fries - I dip them in McFlurry; preferably with Daim.

If I can't say ketchup, then the answer has to be nothing. If I were forced to pick something, I might say mustard. With apologies to other cultures where it is common, mayonnaise is just wrong, IMHO. And I don't like the whole sweet and savory thing, so the photo at the top is no-go for me, as well.
I don't put anything on my fries except salt and pepper. I don't like ketchup on them. And never tried it in a frosty font want to either. I'm pretty sure the salt and pepper thing is hereditary in the sense of it tasting really good and all my family does it. No cooking like grandma's cooking. We put salt and pepper on everything just about.

Though Wendy's used to have a hot mustard sauce that was delicious. Sadly it was discontinued like 25 years ago...
