Thai Green Curry is one of my favorite foods I've ever tried and I've tried a bunch across the world. I strongly recommend Green Curry as a starting option and you might, like me, find it your ultimate favorite even after going through a tour of authentic Thai cuisine:

The problem with Thai Green Curry and especially outside of Thailand is that it's all over the place. It ranges from mediocre to amazing. So if your first experience isn't amazing, I'd recommend some persistence.
I'd echo @andreasderjuengere here. Green curry (Kaeng Khiao Wan) is popular here in Japan but there are only a few restaurants I've found that match what I had in some of the best local Thai restaurants. It can be quite spicy but still so great even on the milder side. The ingredients also aren't so fixated. So you get quite a wide range of flavors ordering the same thing from different restaurants.
I have Thai food each day :D
My clear favourites are:
- Gaeng Keow Wan = Green Curry <3

- Gaeng Om = A herb Soup from the North East ( Issahn ) with lots of fresh dill <3

And - believe it or not - Ant egg salad is delicious as well
Yes I love Thai food, some dishes that I like are, Pad Thai which is fried Thai noodles, Tom Yum Goong which is a prawn soup, and Pad Phak Tong which is stir-fry Pumkin, I also like Panang which is a Thai curry not so spicy as some of the other Thai currys. There is a fried green leafy dish with is called Pak Boong, translates to morning glory lolI also like creme of sum yun gui 🤣
Had this with my family 2 days ago.. and had the left over tonight. We also bought extra since we moved.
Good Food
Lots of authentic thai and I like Tom Yum soup, green curry, red curry, pineapple fried rice... etc.. just lots of good choices. We would like to go to Thailand and other part of Asian Countries next year if we can. go
Yes I'm half Thai there's always food in my fridge and sticky rice on deck in my crib it's annoying sometimes because my daughter likes grandma cooking better well my mom cooking is better it's funny because we live in the same neighborhood my house is only down the street from my mom's crib so it's just easier having dinner over there I love my chicken pad Thai with curry chili sauce eating it with sticky rice mmmm 🥰 lol!
I lived in Thailand some years ago. Most true Thai food is spicy, how spicy varies with the dish. A good non spicy dish is Thai Fried Rice – Khao Phat.
My dad and I used to get Thai food all the time. It’s his favorite. I used to get spicy phad Thai
Something with rice, chicken and a white sauce lol I don't know the name, we didn't eat Thai often enough for me to remember it.
Ah yes I had Thai food many times. Last one was a soup which my mom made. I don't remember the name of that dish but it was great.
Pad Thai with peanut sauce. Crab rangoons are my favorite, but they're an appetizer.
My favorite is coconut soup with rice, and Thai iced tea

Your observation is partly correct: many ingredients need to be imported and aren't as fresh as here 'around the corner'. Many restaurants (''abroad'') also often alter the dishes to match them with 'local taste' - typically, they use a lot less chili or hot sauces than 'at home' :)
