I used to be a vegetarian, but I'm not now. This question can not be answered easily. That's because nutrition is very complex. The science of nutrition is young and very incomplete. It's the kind of thing that the more you learn, the more you realize you don't know.
If you are going to be vegetarian and still eat a nutritious diet, you need to do a lot of studying. Be very careful with the source that you study because there is a lot of BS out there. I've studied nutrition informally for most of my life, and studied it formally as well. It's very complex with a lot of unknowns.
Meat is extremely nutritious. For a vegetarian to get the same amount of nutrition as even a small amount of meat, you need a much larger amount of food, and a wider variety of food. There is NO single source of food that can substitute for meat. So you have to combine different foods in the right way.
While protein is important, and not easy to get as a vegetarian, there are a lot of other nutrients you need to pay attention to. It's not just about protein, fat, carbs, vitamins and minerals. There is a lot more to it.
So the only answer to the question is to study it. Keep in mind that your body is highly adaptable and can live on a very poor diet. If you don't eat right, you may never know the difference in the short term. But over years or decades it can really make a difference. I've known a lot of vegetarians n my life, including many good friends. More than half of them eventually started eating meat again after 30-50 years because of some kind of long term effect of vegetarianism.
Keep in mind that no matter what some people claim, humans are NOT naturally vegetarian. Being a vegetarian is trying to live in a way that is not natural for the human body. So if you do it, you need to go out of your way to learn about it and be far more vigilant about your diet than a meat eater.
The question of what to eat is not difficult at all as a vegetarian.
The problem is that people eat the same kind of crap that they ate as meat eaters. It's possible to surmise that it would be natural to subconsciously bring the body back into balance as a meat eater because you can just eat a shit ton of meat if you have that inclination, as a vegetarian your philosophical red-lines stops you from doing so. What makes eating meat 'healthy' is likely not by virtue of the fact that they're eating meat, but that they're simply able to maintain balance.
A plant based diet (rather than a philosophical vegetarian one) is likely very healthy, if they just allowed themselves to eat a bit of fish every hour and then, or even a bit of meat, as traditional cultures such as the Okinawans did.
The crap foods are (excessive) cheese, an over-reliance on it because they can't get their grounding meaty sustenance without it.
Overly processed foods.
Refined grains, basing their diets on this empty sugar spikery crap.
Also, most meat eaters have shit health, too.
Of course long term health is important. But if you get sick very infrequently (such as less so when you ate meat, and you didn't catch convid); you have lots of creative energy, and lots of energy throughout the day; then this is a good sign that your diet is working.

Don't focus on what you are giving up... Because there will be MANY new things, you have no clue even exist, to fill its place.
That is one thing nobody seem to know until after they go vegan. You end up eating more diverse.
People who say, "What are you gonna eat" are literally ignorant of what it can actually be like for a Vegan... Seriously. If they knew, so many would be more open to it.
Lastly, don't call yourself vegan unless you are fully vegan. That means all products, not just food. Whatever you choose to do remember you are doing more than 99% of the population. You are choosing to not aid companies that hurt/kill animals. Even if all you do is drink unsweetened almond milk instead of cows milk that is SO much. Even if you do it for you and not for the animals.
Thank you and don't let ignorant people scare you. They don't know anything about being vegan. Listen to vegans who are successful with it. Most people don't even think about what they are putting into their bodies day to day... So I don't know why they give advice to other lmao. Don't try to get others to go vegan. Some will do it because of just noticing you but I find many people disrespect me and other vegans even though we don't try to convince others to go vegan. They generalize and treat us like we're all the same. That's just what humans do. Sad but true.

Tipps: if you are invited to barbeque party bring some "meat replacement" that is prepared the same as what the others are eating. That makes things really easy. On the other hand filled champignons for excample is something a lot of others like too so its not only for you and great for barbeques as well.
While soy is mostly used for feeding animals for meat its still bad for the enironment in both cases (Animal food and vegan products). Its still good to know that there are great ways for most local grains to work into a good part of a meal similar to soy.
Depending on your reason to go vegan/vegetarian: Dont think it is necessarry to go the full way or not at all. Every step can help. Maybe just buy less meat and when you do go for organic products. Or in my case I am full vegetarian and with the exception of cheese (which I love and dont want to miss) I am even vegan.
Also do your own research and dont get confused by sayings like " meat replacements use so much water and energy that its really not worth" while compared to a lot of meat products it really is better just not 0%.
It often comes with vegetarianism or veganism automatically, but be more aware of what you eat. It can be more healthy than the average non vegatarian but you can also do a lot of things wrong. Everyone should go for a balanced diet but specifically not eating something can make it harder to do that. Nuts, lentils and beans for excample can be a good replacement for a lot of what meat bring in nutritiants.
And a tipp that is not unique to vegetarians or vegans but is more important when your diet "forbids" specific foods, try a lot of different meals and try to find what you like. There are so many options but a lof of people stay with something that they like without experimenting further to find something even better. You can allways go back if something is not for you.

One important tip is to make sure that you’re getting your nutritional requirements all covered, especially nutrients that are usually found in animal products but difficult to find in plants. One example is B vitamins.
It would not be a bad idea to purchase something like vitamin B complex (it’s called complex because there are multiple types of vitamin B and it’s important to not neglect them) to supplement your diet.
Like, you can literally go blind if you aren’t getting enough vitamin B, so yeah. Just make sure you’re doing it safely and having all your bases covered. 😊
Even tho I'm vegan it's kind of hard for me to give tips on how to become one since I've been one my whole life. I'd say maybe start slow and cut out the meat and dairy slowly overtime. Cutting it all out at once seems extreme. Also finding meals is simple just use Google. You can basically look up vegan anything and find it

Seriously it is not something to do from a political view. I stopped eating meat a long time ago because I didn't really like it. I feel contempt for fake meat eaters by the way.
I do think you should be willing to kill you own meat if you want to eat it but that is just my view.
You can very happily eat less meat if you want to have a lesser footprint.
I've been vegetarian since I was 11 and vegan since I was 18 and here's some things that helped me.
I'd say replace meats you'd eat for lunch and dinner with a combination of meat substitutes and beans and rice (that's as filling as any meat you'd eat). As for breakfast you could go with oatmeal for something filling.
Any meal you like can easily made without meat, just replace it with plant based stuff, either some of the "beyond meat style" soy/pea/wheat protein stuff, or pure vegetables. I can also recommend smoked tofu.
Don't do it for Mother Earth. She's a total bitch.

It's easy I do it, but I am not a vegetarian I still eat white meat but I mostly eat plant based and veggie but my situation is different I have a bad stomach intestinal issue so I cut red meat out.
