Cooking dirty rice tonight but plan to use a cauliflower alternative. Is cauliflower rice good?

It's ok. The key is to use fresh cauliflower so it retains its texture. I've made a cauliflower fried rice and you'd be hard pressed to tell the difference.

I like cauliflower but as rice🤮 I don't know. It's making me nervous cause I've never tried it as rice but it's less calories, less carbs and healthier

Use enough seasoning to mask the cauliflower taste.
