I think you should try Cajun Rice which has bell pepper and onion in it and throw in pecan pieces. The pecan fragrance will permeate the rice and the onion and green pepper spice it up a bit.
If you want some great rice, look for the blends that mix wild rice, which is a grass actually, with red rice and jasmine etc. Any rice that has a heady aroma due to something you add is a great choice. However, don't add cheese to rice. Ruins it.
You want flaky, easily separated kernels of rice, not some kind of glue. Spanish rice is also nice. If you have another nut you like, such as almonds or walnuts that are FRAGRANT after cooking, use them. Adds protein to your rice dish and keeps the fluffy, natural "riceness"
And of course there are rice dishes such as jambalaya, that add spicy sausage or paella, which has yellow rice, green peas and mussels. Wonderful way to create a showy, delicious meal with everything in one dish! Much more versatile than potatoes!
But I'm prejudiced because I'm a Southerner. Rice is our go-to side dish or used with beans etc!

Broccoli cheddar is always good if you're doing something like chicken for dinner (tastes like mac & cheese). But the coconut pineapple one sounds delicious!
