Is it the firm waxy potatoes such as the ones you have in salads?
Or is it the floury fluffy type?
I didn't vote. It just depends on what dish I'm making. Different dishes call for different kinds of potatoes. French fries and mashed potatoes are generally (but not always) better with fluffier potato varieties, while soups, stews and salads require a waxier style of potato so it holds its shape and doesn't break down as easily.
On average, I'd say yellow-fleshed Yukon Gold potatoes are a good, all-around, flavourful potato. Especially when grown yourself in the garden. They hold their shape in soups, stews and salads, and are also good for baking and mashing.
I prefer yellow-fleshed and red-skinned potatoes the most. I'm not as much a fan of white potatoes, unless used for French fries. Purple varieties are also nice to add a different flavour to mixed potatoes, but I wouldn't want them all to be purple.
Fluffy roasted potatoes are my favourite but I do like boiled potatoes with butter on too.
Maris Piper are described as fluffy but I don't like those ones, I don't know why they are grown so often, presumably it is about yield.
King Edwards are the best ones that I can name but I don't know as much as i should about it.
Definitely prefer fluffy potatoes, although I am not a native to Ireland.
traditionally, we will turn our leftover boiled or baked potatoes into mashed potato pancakes the next morning :-).

But really I like both, I am just an incredible potatoe-lover, I can eat my weight in potatoes, and it does not matter how it's cooked, fried, boiled, roasted, any and all are welcome, just give me more.
I've dropped them from the diet these days , I voted Waxy because that is what I always used to buy , easier I reckon..

How you prepare and cook them makes the difference. I like Yukon gold fluffy mashed potatoes but waxy red potatoes oven roasted.
