That is plastic, not cheese. Aged cheddar, mozzarella, and a small bit of fancier cheese like Swiss or Blue. Then add a shredded cheddar crust as you fry it.

I rarely eat grilled cheese, but if I did I would choose the Spanish Manchego cheese. Very nutty and full of flavor.
