Bought a new slow cooker, any recipe suggestions?

I'm sure most people will suggest dishes with meat in them (nothing wrong with that!), but here's a veggie alternative if you want something different...

This recipe is super (soup-er? 🤔) easy to make, and is really nice to have on a cold day. It's also a good recipe for when you don't have a lot of time, but you want something really tasty at the end of the day. The thyme, oregano and parsnips really add a lot of flavour to this dish, and I feel the fresh sprigs of thyme really makes a difference, so don't use dried thyme if you can get fresh.

The recipe doesn't say, but you're supposed to use DRIED lentils for this dish. Just be sure to rinse them before adding them to the pot. You can make it with sodium-free broth and season it with salt to taste like the recipe calls for, or you can just add regular broth. It's your choice. You can also use kale or fresh spinach, or whatever greens you like instead of the Swiss chard, or you can omit the greens entirely, but I feel the Swiss chard adds to the flavour. The parmesan might sound odd, but it adds a nice flavour, and it's sprinkled on top of each bowl, not into the pot itself. I also like to serve this with garlic bread made with olive oil (not butter).

Lamb shank in a red wine sauce would be nice easy starter. I'd make a sauce of 2 parts stock 1 part wine, chuck in carrots onion a few herbs and submerge a few 4 or 5 shanks for a few hours til tender.

Beef rolls are a perfect dish for slow cooker, soups and sauces on base of beef bones or ribs are good recipes for slow cooker as well.
I use slow cooker for broths which are more aromatic than broths cooked on smallest possible gas flame.

Orange Ginger Chicken

• 1-2 lbs boneless skinless chicken breasts
• 1 large can frozen orange juice concentrate
• 1/2 tsp Ginger (fresh, ground, or paste.. all are good)
• 1/2 tsp Salt
• 1/4 tsp Ground black pepper

Put all in your slow cooker on low for 6 hours. Serve the chicken over rice and top with the orange sauce. Sprinkle shredded coconut and slivered green onions on top. Garnish with orange slices.
