Healthy is easier than people think.
Firstly, try to eliminate carbohydrates. The human body runs best fuelled by fats and proteins.
Second, avoid anything that has to be heavily processed. Most Seed oils are not great. Rather use olive oil, avocado oil, coconut oil, beef tallow, ghee (purified/clarified butter) or most oils with a very high temperature tolerance (smoking point).
Third, Eggs are your friend. They're versatile and have a huge punch in terms of nutrition.
Fourth, cholesterol is not your enemy. Your entire brain is made of it. Alzheimer's was almost unheard of before the advent of statins. You need it in your diet. Obviously I'm not saying go nuts, but don't worry if you fry your food in bacon fat.
Now a few meals...
Steak dinner:
Rump or sirloin 8oz/250g cooked rare or medium rare at most. The cow gave it's life for your dinner, respect it 😉
The meat should be about an inch thick. Cook for 4 minutes, turn over and cook another 4 minutes on a high heat. Take it off and let it rest on a room temperature plate for the same time it cooked for at least.
Accompanying sides: caramelised onions, sweet potato fries if you have to have fries, stir fried carrots, courgettes (zucchini), bean sprouts, garlic and spinach. Ideally stir fried in ghee or tallow, but olive oil is tasty too, and a soft yolk, Sunnyside up fried egg on top.
Mushroom pate
1lb mixed mushrooms
Butter
Olive oil
1lb full fat cream cheese
1 large onion
Coarsely chop mushrooms and onion.
Warm butter and olive oil together. This stops the butter burning.
Add onions and cook until starting to turn golden. Don't caramelise them as the flavour will dominate.
Add mushrooms and cook until all the butter and oil has been absorbed.
Allow to cook in the skillet.
Once cool, mince coarsely in a blender and add the cream cheese. Stir through thoroughly.
Decant into ramekins, cover and store in the fridge.
This pate keeps until the use by date on the cream cheese, usually around two weeks. There's proteins and fats in the mushroom and cheese. If you have to have toast go ahead, but personally I like to just dip raw carrots in it. It's a good option for a starter if you're entertaining or a lunch option.
Cold drink:
Iced tea. Quick and easy.
A quart/2 pints/1 litre of water
Your preferred tea leaves/bags. I'm going through a green tea phase right now. Loose tea is better than bags as most manufacturers have started putting plastics in teabags 🤦
Mint
Honey
Fresh lemons
Coarsely grated fresh ginger
Boil the water. Pour onto the tea leaves
Add mint, juice of two lemons and about a quarter teaspoon of the ginger. No more or it's overpowering.
Add honey to taste. Preferably locally produced raw honey, but store bought irradiated is still better than sugar unless you grow the cane yourself.
Allow to cool completely then strain through a muslin cloth (a tea strainer tends to let ginger through)
Chill then serve over ice with fresh mint and a slice of lemon.

But they are like a 2/10 for Taste LoL
1) Oats + Milk ( Add Cocoa powder, crushed nuts, Mashed Bananas or other fruits for taste.. sugar is not recommended since it makes it unhealthy)
2) Boiled eggs cut and topped with chilli flakes and Oregano
3) Omelet ( Eggs+Oats+milk+ your favorite spices- "Beat it" and pour to pan)
4) Oats cake :
I like salads. Simple and yummy.
Tomato, avocado, two hardboiled eggs, salt and pepper. Everything cut in dice and mixed. I split it into two portions. It keeps me full the whole day.
Thai glass noodle, chicken breast, canned corn, fresh cucumber. Cook noodle, cook the chicken breast on steam and cut in dice, add corn and cut in dice cucumber. Mix all and add a whip of mayo.
Parmesan chicken with bacon on top, keto potato soup (just replace potato with cauliflower), chicken noodle soup with ham & Swiss Cresent rolls.

I live on rice, veggies, and fruit. I really don't eat much else.

Quinoa on a bed of Bibb or butter lettuce with avocado, tomatoes or sweet bell peppers (or both if you like), red onion, and some salmon. I add a mustard based Moroccan oil and white balsamic dressing with a bit of minced or fresh garlic. Or, I'll use a yogurt style dressing similar to Tzatziki but thinner. It's fabulous and it's healthy.
So really simple , because I try and do hardly any ( none if poss ) processed carbs , so it can be grilled something Beef / Pork / Salmon / Chicken with grilled tomato and Salad , high protean , no processed carbs.

My signature meal:
Fried salmon + long grain rice + mix of vegetables (broccoli, gherkin, paprika...)
probably a super food green salad with a protein, cheese and hard boiled egg. (chef's salad non-traditional)
My usual healthy dinner is usually pan seared fish fillet with garlic (rock fish, dover sole, etc doesn't matter what kind of fish as long as you like it) and steamed broccoli with a pinch of salt & black pepper.
1 lb of 3 hour water-soaked sheep cheese is tied with 6 somewhat green bananas.
Pan fried chicken strips with garlic and lemon juice.
Steak/chicken, some form of potatoes or rice, green/black/pinto beans, garlic bread.
Quite a lot of salads, and vegetarian or vegan meals, actually. 🤔
Just a snack, toast with avocado, feta, and tomatoes
