Depends on main dish. To herring fillets in sour cream and onions are potatoes obligatory. Most battered or breaded dishes taste better with french fries. However most dishes go with both

I like boiled potatoes cause in Chinese culture we eat deep fried shredded potatoes which is over twenty times more flavourful than fries.
