
What is your favorite sauce for pasta?


For beef or sausage with pasta, I want some kind of tomato based red sauce. It can be bolognese, marinara, or its own meat sauce.
For seafood or shellfish, I like a butter and oil based herbal mix, depending on the protein. Basic ingredients like garlic, onions, or shallots, with some combination of either oregano, thyme, basil, rosemary, marjoram.
The lighter the sauce, the more intensely flavored grated cheese I want. Reggio Parmesan, Romano or aged Asiago are my favorites. Grana Padano is the "poor man's" Reggio Parm and usually goes for about half the cost. I'm not a big fan of cream sauces, so I stay away from those.
Carbonara
pancetta (guanciale is better if you can get it but that remains elusive here) diced fine and fried until crispy (pancetta might need some fat to fry like butter, olive oil or lard)
Grated hard Italian cheese Grana Padano, Parmesan Reggiano or Pecorino make little difference to the end result
An egg per portion
Black pepper to taste
Beat the egg, add the cheese, add the pancetta once cooled, mix into freshly cooked spaghetti (quickly or the eggs will scramble rather than silkily cling to the strands), add black pepper if desired and eat
-Bolognese: Minced beef, carrots, celeriac, onions, garlic, tomatoes, oregano, basil, sugar
-Gorgonzola: Smoked ham, garlic, sweet cream, Gorgonzola, Parmesan, white pepper.
-Romana: Smoked ham, garlic, tomatoes, sweet cream, black pepper, Maggi seasoning, nutmeg, Pecorino cheese, sugar
Vegetable tomato sauce and alfredo sauce.

Not that I go for pasta, but chicken-pesto with some ginger and black pepper. Beard protip- spiral pasta is fairly non-drip/squirt.
Nothing like a good Bolognese sauce to make me feel nostalgic and at home
