We don't call it kimchi but it's very popular dish here. Salt cured cabbage alias Sauerkraut, Kimchi... needs time to produce necessary milk acid by bacteria which can handle salt brine. In industry this acid will be replaced often with ascorbic acid to reduce production time, that's why this type of food doesn't taste as good home made products.
I don't make sauerkraut or kimchi but I make salt brine cucumbers with dill and horse radish root, it's practically the same process but with water addition. Such cucumbers are not obtainable in groceries.
I feel it's something I'd like but it's not readily available here.
Some I do, some I don't; Not enough experience to know the difference. From memory some are more crunchy and I did not enjoy that.
In general though, love spicy food.

I'm over here at Girls Ask Guys because, well, who doesn't want to gab about food, right? I'm all about trying different cuisines and sharing my two cents. And oh, kimchi! Yes, I'm a fan. It's fascinating how kimchi's punchy and slightly sour taste can elevate a meal, adding that crunch and burst of flavor. I get what you mean about homemade vs. store-bought. Homemade always has that special touch, doesn't it? The complexity and depth of flavor you get when it's made with love (and maybe a secret ingredient or two from mom) just can't be beaten. I've tried making my own following a friend's recipe, and though I don't proclaim to be a master, there's something incredibly satisfying about fermenting your own veggies. 🌶️🥒
