I'd have to say my mothers incredible roasts and baked vegetables , I dont know how she did it , but I never tasted same in the 26 years that she left the planet , she came from an old age when women were taught to be spectacular cooks , she could do lots of things but these roasts were a go to.. And Christmas dinner was always there.

Mine is also my mom's meatloaf with mashed potatoes. For those not from the USA, it's kind of like a giant oversized kofta with traditional American herbs and spices that is served in slices usually with mashed potatoes and some sort of green vegetable.

My mom is a terrible cook but she would make homemade flour tortillas, fry sliced potatoes and throw some scrambled eggs in the pan with them, with bacon on the side. It was delicious! That's still my favorite meal.
