For main meal a Wienerschnitzel or Holsteiner. Which is a lightly breaded pan fried veal cutlet, garnished with capers, lemon and anchovies, served with spaetzle, red & white cabbage
Then if I want to go go the extra mile. I'll top it with a fried egg and call it Holsteiner
For a salid I like to use mixed green leafy veggies and blackened salmon fillet. Then add tomatoes, pickled beets, coleslaw and cucumber salad with maple vinaigrette.

It depends on the season. This is my favorite salad to make. The butternut squash and cranberry dressing give it delicious fall flavors. I happen to have a picture already, so this is the one I am sharing. 😋

Ha ha. I use paper plates a lot too to not have many dishes. :)
I like to make deep fried tater tots and BBQ Angus beef hotdogs. It is easy to make, I can use paper plates so there are very little dishes, and most people like it so nobody is left out with nothing enjoyable to eat.
The more specialized or unique a dish is, the more likely there will be someone that won't eat when having company so I prefer something that appeals to most people. And when I have people around I like to spend more time with them and less time cooking, so I don't make more complex things.
My favorite meals change all few weeks. I cook for my self, therefore I don't need to take care about food wishes of others. Sometimes I have weird food whims like grilled eel or salmon in vinegar onion marinade and I cook it because I can.
I quite like making Mediterranean dishes like a Paella or a Moussaka if I have friends coming over. In winter I usually make a roast dinner, chilli or a Goulash, something that's hearty to warm them up.
If its just for me, it will either be pasta with a freshly made tonarto and basil sauce with maybe some grilled chicken, or a stir-fry, maybe even just a fancy salad with chicken. I generally eat fairly light when its just me.
starter - crostini with burrata, dried tomatoes and basil oil
1 course- pasta alla carbonara
2 course - roasted duck breast with backberries, raspberries and blueberries sauce served with roasted potatoes and porcini mushroms with olive oil rosemary and mixed pepper
wine: Lambrusco di Modena (red wine)
beer: Leffe radieuse
water: San Pellegrino sparkling water
Sachertorte and expresso coffee at the end of the meal

One of my Puerto Rican friends taught me how to make their style of chicken stew and white rice. I love it whenever they make it, so I asked them for the recipe. I may be white, but dammit I know my spices!

Whole artichokes (with salty/butter/fresh lemon dip) comes to mind. I’ve been fancying them. They are usually fun and pair with a number of things. I’d probably go with chops and mashed potatoes.
I love to make baked potatoes with a tonnn of cheese and a ton of bacon. I also like to put chives on them. I also love to make stuffed shells and then put alfredo on them. I luv cheese ❤️🧀
I have only created Calzone, Wet Burrito, and Meatball Subs but I eventually want to make my own sushi and I think creating my own parmesan chicken and pasta would be a good experience.
