Y'alls pancakes are more akin to crepes than those you'll find here. If I do it myself it's just a couple stacked with butter and maple syrup.

I love our neighbor and great friend across the pond! However, you have errored here! Those look like what your friends to the south call crepes! As stated by many below. When you fold them into quarters, it's like a Breakfast Quesadilla! Surely not Pancakes, lol, cheers! 🍻
Here, those are called crepes. Pancakes are much thicker and fluffier.

In my family pancakes have always been dished out flat, because its a 'build-your-own' experience with sweet or savoury fillings such as cheese, fruit, vegetables, meats, and a variety of spreads.
My mum always made them folded so I do the same.
