fun fact, the late 1800s-early 1900s USA saw attempts to replace dairy, eggs, and meat with foods easy to industrialize. like peanuts, corn and soy. many people got severe vitamin B deficiency, causing scaly rashes all over their body, from being lied to about corn being a "complete" food. this is also around the time meat and dairy became so toxic/inhumanely farmed that raw animal foods disappeared from the American diet. whereas in Europe they persist in the form of raw cheeses raw meats

in Germany they still eat RAW pork and according to Wikipedia it is "minced raw pork is widely eaten as a spread on bread". (whoops, there goes the BS you learned about raw pork and chicken being deadly from your capitalistic overlords selling you TRASH from a factory farm)

Until recently the human diet was grain based, livestock was usually only slaughtered on special occasions or eaten by the wealthy. Look at historical recipe collections and you see far more grain based recipes than meat ones.

I'm not sure what the genetics of America was at the time but I thought it was close to 95% English or at least British. besides that's just what my history teacher told me, Americans are better food and they grew taller. the big reason people left Europe was the industrial revolution where they worked all day for pennies and ate scraps, while living on tiny pieces of land. there's examples in the ancient world of tribes eating blood to supplement their diet, and those people show no signs of stunted growth. particular when comparing Spartans and Athenians. Spartans were larger because they ate blood soup. then came along religions that said blood is vampire food and people switched to grains
