Yes and no. Plums, really all pitted fruits, are a pain in the ass. IF... you get one at the peak of perfection they are all fantastic. But they can go from hard as a rock with no sweetness or juice to rotten and squishy seemingly overnight. Ya never know what you're gonna get until you sink your teeth into one. Plums, peaches, apricots, mangoes, nectarines, cherries.
Slowly cooked blue plum marmalade is one of my favorites. Brandy distilled from plum wine is good as well, my dad makes a good one.

Excellent presentation, chef. I don't eat a lot of plums but I recently purchased fig preserves. On top, would you call that a plum reduction or is it more like a jam?

Yeah I wouldn't even call it a reduction. I find the syrup from a can of plums doesn't have much flavour despite the bright colour so thickening a little bit just makes it a nice sauce to lay over top

I don't usually eat plums themselves but I like to make plum jam. During harvest season when they go on sale I'll buy about 5-10Kg and make jam. The baking method works really well for plums. I like that better than stove top cooking.

Absolutely it's a super simple recipe
125 g butter softened
395g can sweetened condensed milk
3 eggs
1 1/2 cups self-raising flour
Cream butter and condensed milk together (egg beaters will work well) add eggs 1 by 1 mixing well in-between then soft over flour and fold in.
I then added canned black Doris plums (taking the stones out) and canned apple slices and mixed that through. I kind of eyeballed it but I would say it was about 1/3 cup of each. Bake at 180°c fan covered in aluminum foil for about 45 min or until a toothpick inserted comes out clean.
I doubled this recipe and got 3 loaves so there may be some batter left from a single batch.
The topping is some cream cheese icing and leftover pieces of plum which I poured over thickened syrup from the can. To thicken the syrup heat it up to a boil, mix custard powder about 1tbsp with 2 tbsp water to make a slurry and whisk into the syrup. You can add more until it's your desired consistency.
