7 moThere is so many in this list , potatoes , sweet or otherwise alone are a big part of my diet. Next in line has to be cavalo Nero , red and white cabbage and maybe peppers 🫑 both bell and sweet , but not so much the chili peppers 🌶οΈ after those itβs carrots , parsnips, sugar snap pea and then beans , particularly cannellini or butter

7 moTough to choose just one honestly. I love kale, tomatoes, spinach, watercress, arugula, broccoli, and okra. I prefer those uncooked for the most part, although tomatoes and okra I like cooked as well.

It's so difficult to choose from- Fenugreek leaves, spinach, dill leaves, okra, sponge gourd, colocasia, colocasia leaves, bitter gourd (but only cooked in a certain way that reduces bitterness to a great extent), capsicum, broad beans, big purple brinjals (that are used for making smoky mash brinjal recipes), peas and potatoes. 😭

7 moSince we are both vegan... I love a variety of veggies. RIght now I love baby cabbage with coconut milk, honey Dijon dressing and lemon for a nice coleslaw.
Butternut squash which is a fruit lol I make a soup with coriander and cumin.
