I love it with good ceremonial-grade matcha, lightly sweetened, shaken with cold milk or oat milk and plenty of ice. It’s earthy, refreshing, and calming at the same time. I discovered my favorite version in a tiny café in Kyoto, after a long walk through the temples, and that taste stayed with me forever.
