I know biryani very well, and I like it a lot 😋
Fragrant basmati rice, caramelized onions, ghee, whole spices, and that beautiful steam when you lift the lid always remind me of my first Hyderabadi biryani in a tiny backstreet shop.

My favorites are Hyderabadi dum and Kerala-style with a hint of coconut. Spicy, layered, rich, and comforting, all in one pot.

I like it when it is soft and tender, and not overly dried, not overly oiled, and not overly salty. I love biryani and I had it in 2 months ago while visiting a friend in Toronto. My first choice was the butter chicken but I wanted vegetables on my plate and the butter chicken did not come with vegetables at the restaurant I ordered from so I got biryani instead.
