Yes, if I make them. I make PHENOMENAL pancakes, if I may say so myself.
This will comfortably feed three adults, maybe you could stretch it to for if you make them silver dollar size.
Mix the dry and wet ingredients separately before combining☝️
Dry -
3 Cups All Purpose Flour
1/4 Cup Sugar
1 1/2 Teaspoons Salt
1 Tablespoon Baking Powder
1 1/2 Teaspoons Baking Soda
Wet -
2 1/4 Cups Milk
1/4 Cup Vegetable Oil
1/4 Cup Apple Cider Vinegar
1 Tablespoon Vanilla Extract
3 Eggs
When you combine the wet and dry ingredients, just fold it together and mix it as lightly as possible. Clumps are very much ok. The cider vinegar and the baking soda will have a reaction that should make the batter very light and foamy. But yeah, I’d say to aim for less than 20 folds/stirs of the batter; just enough to mix it into definitive “batter.” That’s very important.
Ideally, cook these on a griddle at 350°-375° F, and another CRUCIAL step: cook these in melted WHIPPED butter. It’s gotta be whipped butter, not regular. Trust me on this.
Third crucial point: when you flip them, do not —say it with me— DO NOT press down on the pancake with the spatula to flatten it. That will destroy the texture, and you could’ve just saved yourself a whole lot of time and effort and just made “Just Add Water” Bisquick pancakes. Leave them airy, that’s the entire point.
Otherwise, cook them like any other pancake. And if you’re making bacon, BAKE IT, don’t fry it. Game-changer. Serve them with more whipped butter (this is NOT diet food, lmao). This will be like getting breakfast at a fancy hotel restaurant. This is a chef’s pancake, not a short order cook’s.
