I've never heard of oven pancakes. I researched them before replying. I see that they are of Dutch, German, Finnish, and Swedish origin. I'm a mostly German, Western European mutt. I guess that recipe didn't get handed down as many other family favorites have.
Your selection looks marvelous.
It almost but not quite, reminds me of what I'd call a fruit pie.
I'll show them to my wife. She'll make some up, I'm sure.
