When was the last time you made chips (frys) from scratch?

But when was the last time you made chips from scratch? Not bought them from the chippy or opened a bag of frozen oven chips. Actually peeled, chopped, and deep fried chipped potatoes.

Here's yesterday's tea, slices of gammon, egg and chips covered in some Polish cheese I can't pronounce.

Last time I made chips from scratch was about two weeks ago, on a rainy Sunday 🌧️
I used big floury potatoes, double-fried them in a pot of oil on the stove, first low and slow, then hot and fast for crunch.

Served them with homemade garlic mayo and a soy-glazed fried egg, kind of a bridge between British comfort and Japanese vibes 🍟🍳

A long time ago. Only French fries made on fresh oil or beef tallow taste good.
- issue one: fat recycling. With old fat or oil I had to drive to recycling center
- issue two: it's easy to overheat fat or tallow without steady temperature control. Oil fryer with temperature control could be a solution but they need at least 1-1,5 L fat every time.

I’ve never tried yet, but I did somewhat recently buy a mini home fry-o-lator, just like 1-2 person serving size version of the big deep fryers you’d find in a standard restaurant kitchen. Got the little baskets and all, haha. Found it at a thrift shop for about ten bucks, figured “what the hell?” Just haven’t gotten around to trying it out because it was leading up to and during beach season, lmao; now I can get a little fatter for the winter😝 I want to try cooking them in beef tallow; I hear that’s good.

I never have. The closest i’ve come is frying frozen store bought fries in a Fry Daddy vat.
Later in life, i didn’t have my own Fry Daddy, and i wasn’t silly enough to attempt pan frying frozen goodies. So i started baking my taters. To this i question, are they still “fries” if they’re not fried?
I rarely give the UK the leg up, but in this case “chips” might be more suitable terminology.

It's really a very long time ago, in my early teen years, when at home chips where always home made from scratch. First we peeled and cut the patatoes by hand with a knife, and later we had a hand driven device that cut the chips neatly. Then of course the classic boiling 2 times in oil or fat.

Since decennia meanwhile, when I want chips, I go to a "frietkot" (chips shop), and buy them freshly made by a cook.

When my daughter was young, there was a school project where the students were asked to prepare food from scratch. Her mother and I helped her buy the potatoes, peel and cut them, and fry them to make French Fries, which she then took to school to share with her classmates.

That's the only time I've made fries from scratch.

I use kipfler potatoes because they have a nutty yumminess, not withstanding Heston's scientific research on the best potato for the task.

Those are french fries we’ve made them from a bag but not from scratch. You can get those anytime at Burger King or McDonald’s or at Shorty‘s barbecue. They’re pretty good. These are chips.

I've never made so called french fries, only fried... Thin slices of potato in a pan with a layer of oil. I tried cooking that in an oven also, I think.

But it's a rather long road to get to my meal so I've done that a few times only

I usually cut up potatoes into disks and fry them that way. I have not done it in a year or so but my wife did it last night.

I do it all the time. After cutting them up I just spray a bit of oil on them and cook them in the air fryer and they turn out great. Crispy on the outside and soft and creamy on the inside.
