Why would a girl act different when we’re alone vs when other people are around?

At work when we are alone the chemistry is great but when coworkers are around she agrees with everything they say and just acts different

Maybe she doesn't want people to feel like there's something going on between you seeing you're on the job.
Or some people are better one on one, than in a group setting...

That would be something to ask her, but if I may, getting involved romantically with coworkers is risky for many reasons... If go out but then break up, it can get awkward at work, and then too, some companies frown on that iyt in some cases have policies against it...

I’m aware of the cons of work relationships. I’m certain nothing will ever happen because she says she has a boyfriend so I’m just basically trying to guess her intentions

Are you maybe misinterpreting her intentions... Friendly, good chemistry doesn't always mean flirting or romantic interest. people can just click as friends.
I clicked with a lady I worked with once, we just hit it off immediately, became the best of friends, were friends for 20+years before she passed away... And as I'm straight, heterosexual female, it was a friend, nothing more... I've also clicked with some male workers the same way. In a platonic way.

What makes you think it's more than just being friendly? 🤔 I'm a very friendly person when I'm comfortable around someone, and some people may take that as flirting, but I'm not a flirty person lol and I banter the same with males or females...
