I have this woman who has been talking her time when it comes to dating. She said told me let's go slow and be friends first. Then I told her I have a few dates this week to see her response. I don't understand why she just says "She wants to be my girlfriend". It's kinda annoying.

Maybe you should just try to give her time. Maybe she is still trying to figure things out and what she wants.
If you try to faster things I don't think that will work.
