Let’s say you make a joke over text, and the woman responds “that’s awesome;” does that mean she didn’t find the joke funny and is just being polite?
I use words like that if I'm trying to be polite or can't give the appropriate response due to not feeling the intended reaction they want. If I like an art work, I will say, the colours are beautiful, the mood is nice, the angles are gorgeous. If I don't like the art, I will say "it looks awesome." If I think somebody did something smart and I don't care, I will say "it's awesome." If I think somebody did something nice and I care, I will say, "wow, you're so nice to people!" If I don't care, "what you did was awesome."

If she didn't laugh at all, I'd suspect she wasn't sincere with her remark.
If she actually appeared to enjoy herself laughing, then that would have been a remarkable compliment.
What Girls Said
If I would say something like that it would have been a fail. I'll either laugh or just shake my head.
If I'm saying "that's awesome" to a joke, it's cause I spent a minute snorting a good laugh
