Guys often appreciate you noticing they possess an ability you value. Asking them to help you with something shows them you appreciate their ability. Guys are more likely to appreciate being noticed for what they say or do rather than how they look. Quality guys like to be helpful. There are plenty of things you can ask them to help with. You can say you want to see a specific movie but you're not comfortable going to a theater alone, asking if he'd like to see the movie with you. You can say you're not comfortable driving a car without knowing the basics of how it runs and what to do if something goes wrong. You can let him know the volunteer project you're working on could use his expertise, and you'd like working with him. You can say you're preparing the meal for your family's holiday dinner and would appreciate a taster in advance, so you can make it even better.

Start conversations about things you like to do, but its hard to find people to do it with.

Ask him what it's that he likes to do. If you never have done it, then mention how you've always wanted to do that. If you have done it or like doing what he does, talk about how much you liked doing it and how you'd like to do it again.

Or just take a general interest in his interest and talk about how you'd like learn more about it.

Depends what you mean by chasing. The sooner you stop following fake rules of thumb the sooner you will be happy. There is nothing wrong with a girl just flat out asking out a guy. If by chasing you mean being the initiator then that is silly to worry about. If by chasing you mean you put in all the work and he shows no interest then all you have to do is take the hint.
