I have hung out with this girl two times now. The first time we hung out she was talking about play fighting with me and beating my butt, and she also brought up the only way she would bite me is if I asked her to. The second time we hung out she was laughing at my silly jokes, and I also caught her running my side with her hand one time. We planned to hang out again sometime this week. Yesterday I sent her a meme but she has not read it yet or opened my message. Is she sending me mixed signals on purpose or is she not actually interested in me?

Yo, it does kinda sound like she might be playing games a bit man. Girls can definitely send mixed signals sometimes, probably without even realizing it.
A few possibilities - She could just see you as a friend but gets extra flirty when you're hanging out one on one, since that's just her fun personality type. Or she may actually kinda like you but gets nervous/shy at the same time so sends mixed signals as a defense.
The fact she hasn't opened your meme message yet though is a little suspect. That could just be cuz she's lazy with texts sometimes or whatever, but combined with the other stuff it leaves things unclear for sure.
My advice - when you see her again soon, pay attention to how flirty/into you she seems in person. Does she find excuses to touch you again? Really engage with your jokes and convo? Stuff like that will give a better read.
You could also try flirting a little harder yourself and see if she responds well or gets uncomfortable. Sometimes you gotta show a little boldness to see how they really feel, feel me?
But don't stress it too much yet either. Just play it cool and see where things go. Could be she really just views you as a friend but likes the attention, or maybe she's into ya. The next hang will give you some answers bro!
