I started a new job and the girl that’s training me is a bit bossy at times. I know she’s trying to teach me but what are some ways I can tell her to like back off. I just ignore it and say “oh I know” and smile. I don’t want to be rude about it?

Ahh yeah I get what you mean, it's never fun being micromanaged like that when you're trying to learn. With the right trainer it makes the process so much smoother!
Honestly since you said you otherwise get along, I'd just be direct but also nice about it. Like when she's explaining something you already know, smile and say something like "I've totally got this part down, but please keep the tips coming for things I'm still learning!".
Or if she's hovering too much, casually be like "I'm gonna give this a try on my own first but let me know if you see any area I can improve!". Positive reinforcement that you want feedback, just not constantly being watched.
She'll get the hint to back off without you having to be straight up rude about it. Trainers sometimes forget what it's like being new! Plus showing initiative will make her respect your skills more.
If she doesn't ease up after a few friendly reminders, maybe clarify with her privately that you're still learning so like 70% guidance vs. constant 100% coaching would be ideal. Good luck, you've got this!
Best advice is to go with the flow. Let her boss you... Don't say "I know", instead ask her to explain in more detail, or use an example of what she's teaching you.
