This can really go either way. Is she like this in real life as well? I mean super talkative? If she is then I would say it is mostly translating to her texting or however you are messaging. If she is not like that in real life it still isn't a certainty but more plausible that it is because she has some kind of interest. I would be looking at the context of the conversations and looking for clues within those rather than the overall volume of messaging. That will be a lot more telling than just how often she does. The reason I say that is maybe she is just bored and because you are a person willing to talk to her all day you have become her go-to for it.
I don't know her in "sterile enviroment". When I meet her we are usually together, only the two of us.
Messages are pretty random. Not shallow or basic "how are you?"... Mostly what happened with us in school when we were there (both of us finished university). How's our relationship with our family. What are we collecting. So borderline dating questions. Our last call was 4h long and she was ill at that time. She said sorry at the end because her throat was hurting and she had to go because of that. Personally I wouldn't call somebody when I'm having a fever, with soar throat.

Maybe you’re a really close friend, someone to go to because she’s lonely, or she could be interested. Maybe try to test the water and subtly flirt?
From old exp, I never do that with a platonic friendship unless I had some type of attraction or it’s because my guy friend was always messaging me and we were close but I had mixed feelings. I barely message my own friends who are the same people on the daily basis lol. I’m too busy and talk to variety of friends.
