Why do women only care about the things men can’t change?

That’s a pretty big generalization! Honestly, not all women think that way. People, regardless of gender, have different preferences and values. Sometimes it might seem like someone is focused on things you can’t change (like height or appearance), but it’s not just women who do that, everyone has their own tastes and standards.

By the way… a lot of women actually care more about how a guy treats them, his sense of humor, his confidence, and how he makes them feel. Looks and other unchangeable traits might catch someone’s attention at first, but personality and character usually matter way more in the long run.
