• She’s touched and wants to be reassure it’s genuine
• She didn’t see herself that way and it’s hard to believe
• She might think you’re performing, say this to every girl, or wanna see if it’s really true

She is simply having a hard time believing those compliments not that she doesn't or thinks your a lier at all... Just she doesn't agree with them herself, her opinionis different. Therefore she is trying to gain reassurance and see and believe it for her self.
