They might do that because that's something interesting that both could do together. They can learn about each other, see romantic scenery, have a picnic at a certain spot etc.

Or if she's athletic, it might be something they both enjoy.

If the guy is into hiking, sure, why not! They may want to see if the girl is into hiking as well. Guys tend to like that outdoorsy stuff. Just view it as a date and have fun! :-)

I'm a hiker, and would only ask a girl to go hiking with me, if I really liked her. It's a pretty intimate thing. Even on a day hike, you are together for several hours at a time.

I remember when a girl I had fallen hard for wanted to go clubbing but all her friends were busy I offered to go with her. I've even invited girks to things I enjoyed just to have then around. A beer tasting a sci fi exhibit and what not. I knew it was dorky but I had to chose something to do to invite them.
