What does it mean when a guy puts extra letters at the end of words?

Long words could indicate alot:
1) he's flirting- if he says that about you directly when referring to something about you its no doubt flirting (i. e. if you send a selfie and he replies "niceeee"- personally id watch out for these types they are usually players unless you know them well)
2) he's shy around you- pay attention to if this is a reoccurring theme in your conversations, or if he does this with other people he talks to. If its just you you might make him feel nervous- maybe in a good way because he likes you, or he's just awkward because you make him uncomfortable. If he does it with everyone its probably just a quirk and doesn't mean much. Pay attention to his behavior in real life, usually people act different on text.
The third option and most likely is probably nothing. People just text like that to give their words more expression which is hard through text. I do that a lot sometimes but thats just because I'm awkward and dont want to send mixed signals. For example, saying "good job!" seems pretty bland, but when you say "good jobbbbbbbb!!" its got more emphasis and I guess subconsciously makes the person feel better.

usually the extra letters are emphasising on the word

so for example Heeey an excited "hey" same with Hiiii

Niiiice would be an more enthusiastic way of saying
