Can You tell if someone is falling in love by a "look"?

We work together and have for a month now. Yesterday he stopped in front of me staring at me with “sleepy” eyes. He does it a lot, he'll just stare and I'll laugh and ask "what" until he finally starts talking.. At the end of my shift yesterday I came to say goodbye and he was looking into my eyes for a good long minute as we were talking about things and randomly asked mid conversation “what color are your eyes?” .. I know he can be a flirt with girls though but I just get this energy off him...
When we talk I'll say things that seem to always click with him and he'll just pause staring at me with "sleepy" eyes saying he's processing what I've told him. I know I sound crazy but it almost looks like an "In love" type look and it's not like i'm wanting it to be that way I just keep getting that feeling when it happens..
Yesterday I came across a man's YouTube channel where he gives psychological/dating advice. In the video he ironically was saying how you can tell a guy's initially starting to fall in love by a specific look- Head slightly tilted, sleepy eyes that aren't fully open and softer, relaxed face- (and it's the exact look he'll keep giving me at work.) As opposed to the other look mentioned that is sexual and is more of a stare and an up and down movement with the eyes and feels more intense, which I've also gotten from other men so I'm aware of both.. I know that sounds crazy but out of curiosity does any of that seem accurate? He's done plenty of other things too I won't bore you with.. but this look he keeps giving.. Do guys do this lol?

He's probably giving you the "bedroom gaze" popularized by Marilyn Monroe. It's a seductive look that matches your description of his "sleepy eyes". Or maybe he just has... small eyes, or is sleep deprived lol. If anything, I prefer to hold eye contact and wait for pupil dilation because that is a clear indicator of interest and eyes are pretty to look at.

He does hold contact, to the point where he'll keep holding it when we're done talking and i've looked away. it doesn't feel solely sexual to me. and his eyes seem to glisten. and he doesn't just do it out of nowhere. if we're having conversation and i say something that resonates him or that he's into (like the subject of numerology or philosophy or something) he'll stop what he's doing and just give me that look for a few minutes. then reply.

I don't really know what you're trying to get out of this. There's not enough information to judge whether he's interested or not. Giving you undivided attention during a conversation can just mean that he's a good listener. Whatever his sleepy looking eyes are doing can just be out of habit too. You seem to be over thinking this because that's not a significant sign of attraction from a guy. Significant would be physical contact, frequently laughing at your jokes, trying to make you laugh with jokes, trying to create sexual tension in some form, etc.
