Why is he trying to get a reaction out of me?

First he is all sweet and cute and does sweet gestures and favors for me. The next day, will come to my car, walk up with me, grab coffee and smile and blush and be bashful. The next day, he can be cold and serious, especially when there are people around. The next day, sweet to me but shy, still surprised me by doing a very sweet gesture that I was elated by, thanked him happily. The next day, completely avoid me, watch me from his car as I awkwardly stand there confused, thinking we would walk up together. I statyednto walk away and turned around only to see him duck and wait behind cars. Definitely didn't want to be seen with me or be near me. I left to go walk up, alone to coffee and stayed away. To my shock, I see him later walking by a few times. We dont talk. He just goes a long way out of his way to walk by without speaking, only glancing at me. Is he trying to see if I am still upset about him staring at me from the car? Trying to gauge my reaction? Every day it is so damn different to the point that I have no idea what to day and do. This morning's weird behavior hurt. Like he waited and made eye contact staring as if to say "go away." What the hell did I do? I'm consistent. always nice and happy to see him. Always kind. What is he getting at?

I think maybe you're interpreting things, guys are dumb, we generally don't play mind games this early on.
I think he's probably not sure what your thinking, and trying to seem cool he's trying to not crowd you too m much.
As a general rule if you're making eye contact with someone they're not trying to avoid you. Unless there were like small hand gestures, or a head motion. Other wise I'd say he is just as unsure as you are you about the whole situation.

To clarify... if we arrive awwwt the same time, we just walk up together. He always starts off by teasing me. My car, my outfit, the music I'm blaring. Something. He grab coffee, small talk etc. We had a really weird conversation yesterday and he overreacted. I was calm and figured he was stressed. So you could imagine... we arrived at the same time, I started to approach his car. Parked several empty spots away. He just sat there staring st me. No smile. Nothing. Just watching and refusing to get out. I'm shy and awkward and not assertive and the look I got told me do NOT approach. I started to walk up and turned around thinking maybe he was on the phone? He saw me, ducked and paused behind cars. This wasn't a silly joke. Again I thought... did he just do that? I took several more steps and got to the elevator and turned around again. He did it again!!! It REALLY confused me and hurt me. He is very hot and cold. But this was just weird. So... I've stayed away. He's now randomly walked by 3 times today. I'm so forgiving that I'm afraid he will be so so sweet in a day again and I'll forget about his really crappy cold behavior.

Oh and what I mean by overreacting... I asked a simple question. He blew up at me. I tried to get him to simmer as we were at his desk and people were around. I'm always polite and nice so I was trying to be silly and calm him down but also call him out for his behavior. Well, he got worse! Accused me of purposely trying to get a rise out of him. WHAT? Not me or my style. Simple question, was not expecting him to literally lose his temper and get upset and yell (not loud) and reprimand me. So... I figured he was stressed out and he let it out on me. No, he doesn't remotely talk to anyone like that. So... maybe he is mad from yesterday? His actions were very very clear today. He purposely wanted me to feel bad and punish me in a way. But to keep walking by. Or glancing at me from a far hurts. I have no idea what is going on!!
